Fried Flat Rice Noodles With Shrimp Paste

Ingredients

Main Ingredients

  • 250 gr wet flat rice noodles
  • 1 egg (I used a duck egg)
  • 5 cloves of garlic, crushed
  • 1 piece of grilled shrimp paste (about one teaspoon)
  • A pinch of mustard greens and cabbage, sliced
  • A pinch of scallions and celery, sliced
  • 1 teaspoon ground pepper
  • 1 teaspoon bouillon powder
  • 1 teaspoon granulated sugar
  • 2 tablespoons soy sauce
  • 2-3 tablespoons sweet soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon oyster sauce
  • a pinch of water
  • a pinch of oil

How to make it

  1. Prepare the ingredients. Sauté the garlic, add the shrimp paste. Sauté until fragrant. Add the egg, stir-fry until stiff. Add all the seasonings, soy sauce, and other ingredients.
  2. Add the sliced vegetables and a pinch of water, and stir-fry until the vegetables are 3/4 cooked. Be sure not to overcook the vegetables, as they will retain their crunchy texture. Check the seasoning.
  3. Finally, add the flat rice noodles. Stir-fry until evenly distributed. Add the spring onions and celery just before serving, and stir again. Remove from heat and serve warm with fried onions and other favorite toppings.
